You can make Maggie Beer's Kangaroo Fillet

As spring arrives we’re looking forward to the new season’s crops, but with winter’s hearty vegetables still keeping us warm, our friend Maggie Beer has shared another of her amazing recipes:
 
Kangaroo Filled with Roasted Beetroot & Anchovy Butter
which goes so well with Oxford Landing Estates Cabernet Sauvignon and Shiraz.
